Our Story
Over the last forty years, this family company has grown from its remote accommodation beginnings, to become the highly regarded organisation behind a broad range of properties with names familiar and dear to many people.
The Prendiville Group owns and operates numerous iconic tourism, hospitality and entertainment facilities. Represented in a host of different environments, from the red earth mining centre of Karratha, to the lush vineyards of the South West, to the blue waters and white beaches of Rottnest Island, and the rich port heritage of Fremantle.
Samphire Rottnest, located on the premiere tourist destination Rottnest Island, hosts 80 suites, pools, unique dining options, and a range of indoor/outdoor function spaces, overlooking breathtaking views of Thomson Bay. We are entering a new and exciting era and are looking forward to building our team in support of this.

The Role
As our Sommelier, you will possess unmatched charisma and knowledge of wine selection – guiding guests to an elevated dining experience, through your pairing knowledge.
Enhancing the guest experience will be at the core of what you do, storytelling through the pairing selection, ability to suggest additional dishes that match perfectly with the discussed wine and elevating your teams knowledge – further increasing their confidence within the restaurant.
Joining the Lontara team will see you become a core feature across not just the restaurant service, but also provide your expertise in entertaining guests across the Samphire Rottnest guest experience events.

Key Responsibilities
- Provide exceptional welcoming of guests
- Share expertise in wine knowledge & pairing options
- Be confident in upselling beverage selection
- Contribute to the high satisfaction of guests
- Collaborate with bar, service team, and kitchen to ensure elevated experience
- Manage wine service operations of the restaurant
- Assist in maintaining restaurant hygiene standards
- Participate in the set up & down of restaurant to ensure smooth service
- Assist in stock replenishment procedures
About You
- Minimum of 2 years Sommelier experience.
- Expectational knowledge and confidence in wine pairing
- Comprehensive knowledge of restaurant operations.
- Charismatic, warm, and welcoming
- Passionate hospitality professional – thrives on floor energy.
- Ability to work well under pressure – remaining calm & collected.
- High ability to work well in a team environment and autonomously.
- Strong customer relations and passion for creating elevated experiences.
- Immaculate presentation and strong written & verbal communication.
