Prendiville Group owns and operates 21 iconic tourism, hospitality, and entertainment facilities across three states. Hotel Rottnest and Samphire Rottnest are well known for offering a unique experience with amazing views over Thomson Bay. 
 
This is a unique opportunity to be our Head Chef - Lontara bringing authentic, vibrant, and modern South-East Asian cuisine with the best local produce WA has to offer to our signature restaurant, Lontara. You’ll be living on Rottnest Island with accommodation provided.

A great work/ life balance is valued, and hours will be shaped around service. In your downtime we encourage you to explore what the island has to offer including walking trails, 62 secluded beaches suitable for swimming, snorkeling, fishing, diving, or surfing, a unique golf course and even the opportunity to skydive.

We are looking for a highly skilled and passionate leader with solid experience in a similar role within the hospitality industry. You’ll have a strong background of cooking modern Southeast Asian cuisine. Located in the heart of Samphire Rottnest, we aim to create an environment that delivers outstanding quality and a professional working environment that puts the guest first.
   
As a leader you will play an important part in the food and hospitality experience, bringing authenticity and innovation to the kitchen at Lontara.

 
Essential attributes include:
  • Leadership in a fast-paced environment, Lontara often accommodates over 100 covers per service
  • Solid experience in a similar senior role cooking amazing authentic Southeast Asian food
  • Experience driving menus for breakfast, lunch, and dinner services.
  • Ability to carry out daily management duties such as ordering, stock takes, food cost tracking, rosters, payroll, wastage, forecasting, and more
  • Is driven by attaining balance - personal satisfaction - business reputation - company profits
  • Delights in feedback
  • Strong ability to deliver a consistent and exceptional standard of food presentation 
  • High level of work ethic and a hands-on management style
  • To develop and maintain high standards of hygiene, food quality and presentation
  • Excellent command of English
  • Workplace confidence & professionalism
